I made these easy Fig Almond No Bake Energy Bites to combat tortilla chip incidents.
These incidents occur most frequently at 4:45 p.m, when it’s too early to sit down to dinner, but my oblivious stomach is growling anyway. I tell myself that I need just a little bitty something to tide myself over until mealtime. Nothing so serious as a protein bar—a few tortilla chips should do the trick.
Flash forward 15-minutes, and I’m two-thirds of the way through the bag, hungrier than when I started, and really I might as well bust out the salsa, because what are tortilla chips without salsa?
Eventually, I am forced to cook, because Ben does not view “tortilla chips” and “dinner” as synonymous—plus by this point, I’ve eaten all but one sad, crumbled chip at the bottom of the bag. By the time we sit down for our actual meal, I’m no longer hungry. The pesky tortilla chips have beaten me again.
Fig Almond No Bake Energy Bites are designed for the crucial moments like my 4:45 p.m., when you need something to satisfy your appetite between meals. They are also a far, far happier, healthier choice than a bag of chips. They are also ultra-portable, making them ideal for an on-the-go breakfast. I even keep a few in a small container in my purse for long afternoons running errands. The Dunkin’ Donuts drive-through is far less tempting when my stomach is silent.
I love how simple and wholesome the ingredients in Fig Almond No Bake Energy Bites are: rolled oats, dried figs and dates, flaxseeds, and almond butter. The almond and fig taste lovely together, the dates provide natural sweetness, and the flax, oats, and almond butter add filling fiber and protein. They are even vegan and gluten free! So much to enjoy.
To make the bites, simply blend the ingredients in your food processor, roll into balls, and chill. That’s it! I’ve taken to making a quick batch of Fig Almond No Bake Energy Bites (or these Golden Raisin No Bake Energy Bites) on the weekends, so I have an easy, healthy snack or post-work out booster on hand whenever I need it.
